Default Oatmeal Cookies

The person who gave me the recipe said that they were told they made the world's best oatmeal cookies...


Oatmeal Cookies
1/2 # butter
1 c. sugar
1 c. dark brown sugar
2 eggs
1 t. vanilla
1 1/2 c. flour (I used whole wheat pastry flour)
1/2 c. coconut
1 t. baking soda
1 t. salt
3 c. old fashioned oats
1/2 c. dates, chopped
1/2 c. pecans, chopped

Beat butter and sugars. Add eggs, vanilla. Add the rest. Scoop onto parchment and chill. Bake 350 oven until done, 10-12 min. (12 minutes for me they ended up a little overcooked, 10 minutes was just perfect)

Frost w/ the following:
(extreme laziness, not to mention these have to be transported made me pass on the frosting)
6 T. melted butter
2 T. brewed coffee
2 c. sifted powdered sugar
2 t. vanilla
1 t. cinnamon
pinch salt
Mix together in a bowl.

my review.... they're good, but I like the whole wheat oatmeal apricot cookies I made a few weeks ago, better... the dark brown sugar gives it a really nice flavor and the coconut an added texture... maybe the frosting would take them over into the worlds best cookie..

but for now they're jsut pretty darned good.

No one noticed that I used whole wheat flour.. .for me it's a natural fit with oatmeal... and teh whole wheat pastry flour is really light...
